Na po\u010d\u00e1tku tohohle receptu je jedno z nejzn\u00e1m\u011bj\u0161\u00edch vietnamsk\u00fdch j\u00eddel,&nbsp;<a href=\"http:\/\/www.vietfoodfriends.cz\/uvarte-si-sami\/recept\/bun-bo-nam-bo-9\">B\u00fan b\u00f2 Nam B\u1ed9<\/a>. Neboli tenk\u00e9 r\u00fd\u017eov\u00e9 nudle (<em>b\u00fan<\/em>) s hov\u011bz\u00edm masem (<em>b\u00f2<\/em>), spoustou \u010derstv\u00e9 zeleniny, bylinek, opra\u017een\u00fdmi bur\u00e1ky a typickou sladkokyselou z\u00e1livkou. Origin\u00e1ln\u00ed recept se d\u00e1 naj\u00edt na stovk\u00e1ch m\u00edst na webu, sem d\u00e1v\u00e1m recept na trochu jin\u00fd sal\u00e1t, kter\u00fd je j\u00edm jen inspirovan\u00fd \u2013 zobecn\u011bn\u00fd, zjednodu\u0161en\u00fd, ale u n\u00e1s doma dost obl\u00edben\u00fd.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Rychl\u00e1 a stru\u010dn\u00e1 verze<\/h3>\n\n\n\n<ol class=\"recept wp-block-list\"><li>P\u0159\u00edprava (asi 1 minuta) \u2013 n\u011bkdy p\u0159edem, kdy\u017e p\u016fjde\u0161 kolem kuchyn\u011b<ol><li>Ho\u010f <strong>balen\u00ed bun nudl\u00ed<\/strong> do hrnce s vodou, nejl\u00edp vla\u017enou. Ho\u010f do misky, osol, rozklepni do toho 1&nbsp;<strong>vejce<\/strong> a dej asi l\u017e\u00edci <strong>\u0161krobu<\/strong>. Baj voko, sp\u00ed\u0161 aby to \u010dvachtalo a nebyl z toho beton. Proh\u0148ahn\u011bj, klidn\u011b rukou (\u010distou).<\/li><li>Na rozp\u00e1lenou p\u00e1nev trochu <strong>oleje<\/strong> a na n\u011bj ho\u010f to maso. Bacha, m\u016f\u017ee prskat. Chce\u0161 to op\u00e9ct p\u011bkn\u011b do zlatova ze v\u0161ech stran. <\/li><li>Slij ty namo\u010den\u00fd <strong>nudle<\/strong> a ho\u010f je do vrouc\u00ed vody (nesol\u00ed se), sta\u010d\u00ed jim cca minuta. Zam\u00edchej maso.<\/li><li>Sm\u00edchej si v misce <strong>z\u00e1livku<\/strong>: cukr (nebo sirup nebo med), limetovou \u0161\u0165\u00e1vu, ryb\u00ed om\u00e1\u010dku a vodu (podle chuti) a a\u017e se cukr rozpust\u00ed, nalij to na ten sal\u00e1t v m\u00edse. Po\u0159\u00e1dn\u011b prom\u00edchej, klidn\u011b rukama (\u010dist\u00fdma).<\/li><li>Na maso v p\u00e1nvi ho\u010f l\u017e\u00edci (dv\u011b t\u0159i) <strong>hoisin<\/strong> om\u00e1\u010dky a po\u0159\u00e1dn\u011b prom\u00edchej, a\u0165 se to v\u0161echno p\u011bkn\u011b obal\u00ed. Ale snad n\u00e1m vietnamsk\u00e1 komunita odpust\u00ed, \u017ee i tak mu doma d\u00e1l \u0159\u00edk\u00e1me prost\u011b \u201ebumbonambo\u201c, a to ve v\u0161ech mo\u017en\u00fdch variant\u00e1ch a des\u00edtk\u00e1ch r\u016fzn\u00fdch verz\u00ed. V\u017edy se jen sna\u017e\u00edme co nejv\u00edc zachov\u00e1vat sou\u010d\u00e1sti, kter\u00e9 jsou na tomhle j\u00eddle pro n\u00e1s kl\u00ed\u010dov\u00e9, a s t\u011bmi ostatn\u00edmi, m\u00e9n\u011b z\u00e1sadn\u00edmi \u010d\u00e1stmi, si tak trochu d\u011bl\u00e1me, co n\u00e1s zrovna napadne. Co je tedy to kl\u00ed\u010dov\u00e9?<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>r\u00fd\u017eov\u00e9 nudle <em>b\u00fan<\/em> \u2013 tedy ty ten\u010d\u00ed, kulat\u00e9. Ani nejten\u010d\u00ed (<em>vermicelli<\/em>), ani \u0161irok\u00e9 (<em>pho<\/em>), ani sklen\u011bn\u00e9 (ty jsou z lu\u0161t\u011bnin), a u\u017e v\u016fbec ne n\u011bjak\u00e9 p\u0161eni\u010dn\u00e9 t\u011bstoviny. S jin\u00fdmi nudlemi to prost\u011b nefunguje.<\/li><li>z\u00e1livka <em>nuok\u010dam<\/em> (<em>n\u01b0\u1edbc ch\u1ea5m)<\/em> \u2013 z\u00e1kladn\u00ed vietnamsk\u00e1 om\u00e1\u010dka, pou\u017e\u00edvan\u00e1 ve spoust\u011b pokrm\u016f<\/li><li>ope\u010den\u00e9 a v\u00fdrazn\u011b ochucen\u00e9 kousky masa \u2013 to je prvn\u00ed z\u00e1sadn\u00ed rozd\u00edl oproti p\u016fvodn\u00edmu receptu, kter\u00fd je z tenk\u00fdch pl\u00e1tk\u016f (p\u0159\u00edp. nudli\u010dek) hov\u011bz\u00edho masa. Pou\u017e\u00edv\u00e1me jak\u00e9koli maso se n\u00e1m zrovna hod\u00ed.<\/li><li>spousta zeleniny \u2013 druh\u00e1 z\u00e1sadn\u00ed odli\u0161nost. Pou\u017e\u00edv\u00e1me, co je zrovna k dispozici, a d\u00e1v\u00e1me zeleniny sp\u00ed\u0161 v\u00edc ne\u017e se obvykle d\u00e1v\u00e1 v p\u016fvodn\u00edm j\u00eddle. Zase \u010dasto vynech\u00e1me bylinky a kl\u00ed\u010dky.<\/li><\/ul>\n\n\n\n<p>S t\u00edm si v\u011bt\u0161inou vysta\u010d\u00edme. Co naopak za d\u016fle\u017eit\u00e9 nepova\u017eujeme a z receptu zmizelo \u2013 zcela nebo jen voliteln\u011b, podle chuti a mo\u017enost\u00ed?<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>opra\u017een\u00e9 bur\u00e1ky \u2013 jsou tam skv\u011bl\u00e9, n\u011bkdy d\u00e1v\u00e1me, n\u011bkdy je (hlavn\u011b s ohledem na alergie n\u011bkter\u00fdch z\u00fa\u010dastn\u011bn\u00fdch) vypust\u00edme<\/li><li>kl\u00ed\u010dky, v\u00fdhonky a bylinky \u2013 kdy\u017e je \u010derstv\u00fd koriandr, perila, mungo kl\u00ed\u010dky nebo jin\u00e9 v\u00fdhonky, r\u00e1di je pou\u017eijeme. J\u00e1 t\u0159eba koriandr a perilu miluju, p\u011bstuju si je na zahrad\u011b, ale zbytku rodiny ob\u011b bylinky smrd\u00ed a i kdy\u017e jsou na stole, nedaj\u00ed si je. Ale to je v\u00fdhoda takov\u00fdch skl\u00e1dan\u00fdch sal\u00e1t\u016f: ka\u017ed\u00fd si nalo\u017e\u00ed jen to, co chce.<\/li><li>su\u0161en\u00e1 cibulka \u2013 \u010dasto m\u00e1me kupovanou, ale kdy\u017e doma chyb\u00ed, tak ji vynech\u00e1v\u00e1me<\/li><li>chilli papri\u010dky \u2013 p\u016flka rodiny chilli miluje, p\u016flka nesnese ani stopov\u00e9 mno\u017estv\u00ed. \u010casem se uk\u00e1zalo, \u017ee se bez n\u011bj v tomhle j\u00eddle obejdeme \u00fapln\u011b. Ale kdy\u017e je p\u0159\u00edle\u017eitost, p\u0159istane ob\u010das na stole taky.<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/opu.peklo.biz\/p\/24\/04\/11\/1712851672-b37fd.jpeg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Z\u00e1kladem je <strong>maso<\/strong>. P\u016fvodn\u00ed hov\u011bz\u00ed pou\u017e\u00edv\u00e1me dost m\u00e1lo, sp\u00ed\u0161 vep\u0159ov\u00e9, ale nej\u010dast\u011bji dr\u016fbe\u017e. Ku\u0159ec\u00ed, kr\u016ft\u00ed \u2013 nejl\u00e9pe nakr\u00e1jen\u00e9 na nudli\u010dky nebo pl\u00e1tky, prudce osma\u017een\u00e9 na p\u00e1nvi a v\u00fdrazn\u011b ochucen\u00e9. Tady si klidn\u011b odb\u011bhneme z Vietnamu do \u010c\u00edny nebo jin\u00e9ho okol\u00ed, a pou\u017eijeme, co zrovna d\u016fm d\u00e1. T\u0159eba klasickou vietnamskou i thajskou kombinaci: \u010desnek, chilli, cukr, limetov\u00e1 \u0161\u0165\u00e1va, ryb\u00ed om\u00e1\u010dka. Nebo sojovku a t\u0159eba ko\u0159en\u00ed p\u011bti v\u016fn\u00ed. Nejrychlej\u0161\u00ed a velmi vd\u011b\u010dn\u00e1 je supertryskov\u00e1 \u00faprava: maso zprudka osma\u017eit, ke konci p\u0159isypat sezam a na z\u00e1v\u011br bohat\u011b zal\u00edt om\u00e1\u010dkou <em>hoisin<\/em>. (Doporu\u010duju si ji po\u0159\u00eddit dom\u016f, se sklenic\u00ed hoisinu takhle vy\u010darujete skv\u011bl\u00e9 asijsk\u00e9 j\u00eddlo b\u011bhem p\u011bti minut.) Jednou jsem d\u011blal&nbsp;<em>bumbonambo<\/em> s masov\u00fdmi kuli\u010dkami, co se neve\u0161ly p\u0159edchoz\u00ed den do rajsk\u00e9. M\u011bli jsme ho s rybou i s krevetami. Funguje skoro v\u0161echno. Moc se s t\u00edm nemazl\u00edm, jednodu\u0161e nah\u00e1\u017eu do rendl\u00edku suroviny, chvilku pova\u0159\u00edm a je to. Ov\u0161em pozor: pat\u0159\u00ed tam t\u0159tinov\u00fd cukr a rozhodn\u011b <em>ryb\u00ed om\u00e1\u010dka<\/em>. Pokud bych ji nem\u011bl doma, v\u016fbec se do toho nepou\u0161t\u00edm. OK, cukr v nouzi sta\u010d\u00ed i b\u00edl\u00fd krystal, ale ryb\u00ed om\u00e1\u010dka se ned\u00e1 nahradit. V\u011bt\u0161inou d\u00e1m do mal\u00e9ho hrnce asi hrnek vody, do n\u011bj nah\u00e1\u017eu na kole\u010dka nakr\u00e1jenou mrkev, p\u00e1r strou\u017ek\u016f \u010desneku (trochu rozm\u00e1\u010dkl\u00fdch a p\u0159ep\u016flen\u00fdch) a nech\u00e1m to chv\u00edli va\u0159it. Pak tam p\u0159id\u00e1m cukr, ocet a ryb\u00ed om\u00e1\u010dku, je\u0161t\u011b chv\u00edli pova\u0159\u00edm, a je to. Voda, ryb\u00ed om\u00e1\u010dka, ocet a cukr maj\u00ed b\u00fdt v pom\u011bru 8:4:2:1 \u2013 ale j\u00e1 u\u017e to m\u00e1m trochu v oku a hlavn\u011b zn\u00e1m pot\u0159ebnou v\u00fdslednou chu\u0165, tak\u017ee to tam s\u00e1z\u00edm od oka a dolad\u00edm podle chuti. Oproti vietnamsk\u00e9mu origin\u00e1lu ned\u00e1v\u00e1me chilli (proto\u017ee ho n\u011bkte\u0159\u00ed neradi) a mrkev i \u010desnek nech\u00e1v\u00e1me na v\u011bt\u0161\u00ed kusy, aby se jim dalo vyhnout, proto\u017ee ty taky nikdo v tal\u00ed\u0159i nechce.<\/p>\n\n\n\n<p>Update: kdy\u017e je sp\u011bch, va\u0159it net\u0159eba, sta\u010d\u00ed sm\u00edchat cukr, limetovou \u0161\u0165\u00e1vu a\/nebo ocet, ryb\u00ed om\u00e1\u010dku a do\u0159edit to vodou, chvilku m\u00edchat, aby se rozpustil cukr, a je to. Jak bylo \u0159e\u010deno, d\u00e1v\u00e1me, co zrovna je. Nej\u010dast\u011bji ledov\u00fd sal\u00e1t (nakr\u00e1jen\u00fd na nudli\u010dky), okurku, papriku, mrkev, cuketu, jarn\u00ed cibulku (v\u0161e nejl\u00e9pe na tenk\u00e9 dlouh\u00e9 nudli\u010dky). Hod\u00ed se do vrouc\u00ed vody a nechaj\u00ed se pova\u0159it podle n\u00e1vodu \u2013 prost\u011b do zm\u011bknut\u00ed. Nakonec se dob\u0159e propl\u00e1chnou studenou vodou. \u017d\u00e1dn\u00e1 v\u011bda.<\/p>\n\n\n\n<p>Update: nejlep\u0161\u00ed je namo\u010dit nudle ve studen\u00e9 vod\u011b aspo\u0148 na p\u016fl hodiny (ale klidn\u011b i n\u011bkolik hodin p\u0159edem). Nudle, zelenina, bylinky, p\u0159el\u00edt om\u00e1\u010dkou, nahoru maso, p\u0159\u00edp. ara\u0161\u00eddy, cibulka a dal\u0161\u00ed pochutiny, pokud jsou. A aby byl odklon od p\u016fvodn\u00ed receptury je\u0161t\u011b v\u011bt\u0161\u00ed, dosp\u011bli jsme \u010dasem k variant\u011b, kter\u00e1 \u0159e\u0161\u00ed dva probl\u00e9my zar\u00e1z: osych\u00e1n\u00ed a slepov\u00e1n\u00ed nudl\u00ed a d\u011bti, kter\u00e9 se tak trochu vyh\u00fdbaj\u00ed zelenin\u011b. Rovnou v m\u00edse sm\u00edch\u00e1me nudle se zeleninou, v pom\u011bru nejl\u00e9pe tak 1:1, a ka\u017ed\u00fd si tak nand\u00e1v\u00e1 nudle rovnou i s n\u00e1le\u017eit\u00fdm mno\u017estv\u00ed zeleniny (a nudle se nav\u00edc d\u00edky zelenin\u011b neslep\u00ed). \u010casem jsme do toho za\u010dali p\u0159id\u00e1vat rovnou i z\u00e1livku a je to nachystan\u00e9 jako ka\u017ed\u00fd jin\u00fd sal\u00e1t.
