Nen\u00ed to tradi\u010dn\u00ed pokrm, pad thai bylo um\u011ble vytvo\u0159eno ve 30.&nbsp;letech 20.&nbsp;stolet\u00ed pro povzbuzen\u00ed n\u00e1rodn\u00ed identity, v r\u00e1mci tamn\u00edho n\u00e1rodn\u00edho obrozen\u00ed. A taky \u00fadajn\u011b i proto, aby lid\u00e9 v dob\u011b nedostatku r\u00fd\u017ee jedli rad\u011bji nudle se zeleninou. Tohle je zjednodu\u0161en\u00e1 verze ze surovin dostupn\u00fdch u n\u00e1s.<\/p>\n\n\n\n<p>Pad thai je \u017eiv\u00fd recept, m\u00e1 jen n\u011bkolik pevn\u00fdch bod\u016f, kolem nich\u017e se to\u010d\u00ed spousty variant. Minim\u00e1ln\u00edm nutn\u00fdm z\u00e1kladem jsou r\u00fd\u017eov\u00e9 nudle, v\u00fdrazn\u00e1 sladko-kyselo-slan\u00e1 om\u00e1\u010dka typick\u00e1 pro thajskou kuchyni a vaj\u00ed\u010dko. D\u016fle\u017eit\u00fd prvek chuti jsou tak\u00e9 drcen\u00e9 pra\u017een\u00e9 o\u0159\u00ed\u0161ky navrchu, bez nich to nikdy nen\u00ed \u00fapln\u011b ono. V\u0161e ostatn\u00ed \u2013 proteiny, zelenina, bylinky, kl\u00ed\u010dky, cibulka a dal\u0161\u00ed v\u011bci \u2013 jsou voliteln\u00e9 detaily, se kter\u00fdmi si m\u016f\u017eete hr\u00e1t a experimentovat. N\u011bkdo si neum\u00ed p\u0159edstavit pad thai bez tofu, jin\u00fd bez koriandru, zat\u00edmco jin\u00ed tyhle suroviny nem\u016f\u017eou ani vyst\u00e1t, a p\u0159esto si po\u0159\u00e1d m\u016f\u017eou ud\u011blat pad thai pod sv\u00e9 chuti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Suroviny (na 2 porce)<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>ploch\u00e9 <strong>r\u00fd\u017eov\u00e9 nudle<\/strong>, 2 porce (150\u2013200 g)<\/li><li>tvrd\u00e9 <strong>tofu<\/strong><\/li><li>b\u00edl\u00e9 maso \u2013 krevety, ku\u0159ec\u00ed prsa\/stehna, seafood apod.<\/li><li>2 <strong>vejce<\/strong><\/li><li><strong>\u010derven\u00e1 cibule<\/strong>, na prou\u017eky<\/li><li>dal\u0161\u00ed zelenina podle chuti, na nudli\u010dky<\/li><li><strong>\u010desnek<\/strong>, p\u0159\u00edp. \u010desnekov\u00e1 nebo \u010desneko-z\u00e1zvorov\u00e1 pasta<\/li><li>\u010desnekov\u00e1 pa\u017eitka, p\u0159\u00edp. jarn\u00ed cibulka<\/li><li><strong>kl\u00ed\u010dky<\/strong> (mungo, sojov\u00e9 apod.), nejl\u00e9pe \u010derstv\u00e9, lze i konzervovan\u00e9<\/li><li>pra\u017een\u00e9 rozdrcen\u00e9 <strong>o\u0159\u00ed\u0161ky<\/strong> \u2013 ara\u0161\u00eddy, p\u0159\u00edp. ke\u0161u<\/li><li>\u010derstv\u00e9 byliny \u2013 koriandr, thajsk\u00e1 bazalka, pa\u017eitka apod.<\/li><li>sma\u017een\u00e1 cibulka<\/li><li>olej<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Na om\u00e1\u010dku<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>palmov\u00fd nebo t\u0159tinov\u00fd <strong>cukr<\/strong>, 2 l\u017e\u00edce<\/li><li><strong>ryb\u00ed om\u00e1\u010dka<\/strong>, 2 l\u017e\u00edce<\/li><li><strong>tamarindov\u00e1<\/strong> pasta a\/nebo <strong>limetov\u00e1<\/strong> \u0161\u0165\u00e1va, celkem 2 l\u017e\u00edce<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Nudle<\/h2>\n\n\n\n<p>Jako \u00fapln\u011b prvn\u00ed mus\u00edme namo\u010dit r\u00fd\u017eov\u00e9 nudle do vla\u017en\u00e9 vody. Neva\u0159\u00ed se, m\u011bly by b\u00fdt namo\u010den\u00e9 asi 1 hodinu, v\u00a0nouzi aspo\u0148 na 20\u201330 minut, aby dostate\u010dn\u011b zm\u011bkly. Zbytek dokon\u010d\u00ed horko a om\u00e1\u010dka v p\u00e1nvi. Na pad thai jsou nejvhodn\u011bj\u0161\u00ed ty placat\u00e9.<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Om\u00e1\u010dka<\/h2>\n\n\n\n<p>N\u00e1sledn\u011b si p\u0159edem p\u0159iprav\u00edme om\u00e1\u010dku ze t\u0159\u00ed stejn\u00fdch d\u00edl\u016f ryb\u00ed om\u00e1\u010dky, cukru a tamarindu\/limetky. V rendl\u00edku nech\u00e1me rozpustit cukr, m\u016f\u017eeme i nechat trochu zkaramelizovat (ale opatrn\u011b, karamel se rychle p\u0159ipaluje a je opravdu \u017ehav\u00fd), zalijeme asi deckou vody a nech\u00e1me rozpustit. Pak p\u0159id\u00e1me tamarindovou pastu (pokud je to koncentr\u00e1t, d\u00e1me jen \u2153 mno\u017estv\u00ed) a ryb\u00ed om\u00e1\u010dku. Tamarind m\u016f\u017eeme z\u010d\u00e1sti nebo \u00fapln\u011b nahradit limetovou \u0161\u0165\u00e1vou. Nech\u00e1me dob\u0159e rozpustit a vypneme. Ochutn\u00e1me a p\u0159\u00edpadn\u011b podle pot\u0159eby je\u0161t\u011b dochut\u00edme. Om\u00e1\u010dka mus\u00ed b\u00fdt hodn\u011b slan\u00e1, kysel\u00e1 a sladk\u00e1, samotn\u00e1 v\u00e1m mus\u00ed kroutit pusu, jak bude siln\u00e1. Ale mus\u00edme po\u010d\u00edtat s t\u00edm, \u017ee t\u00edmhle mno\u017estv\u00ed ochut\u00edme cel\u00fd pokrm. Om\u00e1\u010dka m\u00e1 b\u00fdt tekut\u00e1, je-li pot\u0159eba, z\u0159ed\u00edme vodou.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Z\u00e1klad<\/h2>\n\n\n\n<p>Nejvhodn\u011bj\u0161\u00ed je pou\u017e\u00edt p\u00e1nev wok, pot\u0159ebujeme co nejv\u011bt\u0161\u00ed n\u00e1dobu, aby se suroviny dob\u0159e m\u00edchaly, a dostate\u010dn\u011b rozp\u00e1lenou, aby se co nejrychleji zprudka osma\u017eily. Do rozp\u00e1len\u00e9 p\u00e1nve nalijeme trochu oleje a do n\u011bj hod\u00edme \u010dervenou cibuli nakr\u00e1jenou na prou\u017eky. P\u0159id\u00e1me tvrd\u00e9 tofu, osu\u0161en\u00e9 a nakr\u00e1jen\u00e9 na kosti\u010dky. A\u017e se trochu ope\u010de, m\u016f\u017eeme p\u0159idat i dal\u0161\u00ed maso, pokud chceme. Ku\u0159ec\u00ed na nudli\u010dky, o\u010di\u0161t\u011bn\u00e9 a vyloupan\u00e9 krevety, krab\u00ed maso, mo\u0159skou \u017eou\u017eel nebo kousky ryby, na co m\u00e1me chu\u0165. M\u016f\u017eeme vynechat i tofu a pou\u017e\u00edt jen maso, nebo naopak z\u016fstat jen u tofu bez masa. Nakonec p\u0159id\u00e1me \u010desnek, p\u0159\u00edp. \u010desnekovou a z\u00e1zvorovou pastu a v\u0161e spole\u010dn\u011b kr\u00e1tce osma\u017e\u00edme.<\/p>\n\n\n\n<p>Kdy\u017e je z\u00e1klad dostate\u010dn\u011b ope\u010den\u00fd, odsuneme jej stranou, je-li to pot\u0159eba, p\u0159ilejeme trochu oleje a rozklepneme sem dv\u011b vaj\u00ed\u010dka. Nech\u00e1me je chvilku sma\u017eit a a\u017e m\u00e1me takov\u00e1 nap\u016fl ztuhl\u00e1 volsk\u00e1 oka, v\u0161echno d\u016fkladn\u011b sm\u00edch\u00e1me dohromady. Nech\u00e1me d\u016fkladn\u011b op\u00e9ct, vejce mus\u00ed b\u00fdt such\u00e1, nechceme \u017e\u00e1dn\u00e1 kr\u00e9mov\u00e1 m\u00edchan\u00e1 vaj\u00ed\u010dka.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kompletace<\/h2>\n\n\n\n<p>Kdy\u017e jsou vejce hotov\u00e1, p\u0159ihod\u00edme zcezen\u00e9 nudle. Pokud nejsme puristi a d\u00e1v\u00e1me p\u0159ednost prakti\u010dnosti, m\u016f\u017eeme je p\u0159edt\u00edm n\u016f\u017ekami p\u0159est\u0159ihnout nebo na prk\u00fdnku nahrubo p\u0159ekrojit, aby se n\u00e1m l\u00e9pe m\u00edchaly. Sm\u00edch\u00e1me nudle se z\u00e1kladem a zalijeme om\u00e1\u010dkou. Za d\u016fkladn\u00e9ho m\u00edch\u00e1n\u00ed a p\u0159ehazov\u00e1n\u00ed nech\u00e1me prova\u0159it, nudle rychle zm\u011bknou. Nakonec p\u0159ihod\u00edme kl\u00ed\u010dky a nahrubo nakr\u00e1jenou \u010desnekovou pa\u017eitku nebo na nudli\u010dky nakr\u00e1jenou zelenou cibulku, p\u0159\u00edp. m\u016f\u017eeme p\u0159ihodit dal\u0161\u00ed zelen\u00e9 nat\u011b \u2013 pa\u017eitku, thajskou bazalku apod. Tuhle k\u0159ehkou zeleninu jen prohod\u00edme s nudlemi a p\u00e1nev vypneme.<\/p>\n\n\n\n<p>Na tal\u00ed\u0159i pak ka\u017edou porci m\u016f\u017eeme doplnit \u010derstv\u00fdm koriandrem, dal\u0161\u00ed \u010desnekovou pa\u017eitkou nebo jarn\u00ed cibulkou a jin\u00fdmi bylinkami, opra\u017een\u00fdmi a nahrubo rozdrcen\u00fdmi ara\u0161\u00eddy (p\u0159\u00edp. ke\u0161u, hlavn\u011b kdy\u017e je na bur\u00e1ky n\u011bkdo alergick\u00fd), p\u0159\u00edp. su\u0161enou sma\u017eenou cibulkou, milovn\u00edci ostr\u00e9ho si p\u0159idaj\u00ed i nadrobno nasekanou chilli papri\u010dku. Ty dv\u011b porce jsou i ve velk\u00e9m woku tak maximum, co se tam rozumn\u011b vejde.
