Av\u0161ak pouze voln\u011b inspirov\u00e1n: <em>vitello\ntonnato<\/em> se pod\u00e1v\u00e1 studen\u00e9 a om\u00e1\u010dka je z\u00a0majon\u00e9zy, kter\u00e1 se u\u00a0n\u00e1s\nprakticky nej\u00ed. Ostatn\u011b ani kapary v\u00a0obchod\u011b nem\u011bli\u2026 Ale p\u0159edev\u0161\u00edm\njsem cht\u011bl tepl\u00e9 j\u00eddlo a ten z\u00e1kladn\u00ed n\u00e1pad se mi natolik l\u00edbil, \u017ee jsem\njej p\u0159etavil do n\u00e1sleduj\u00edc\u00edho pokrmu.<\/p>\n\n<p>Takto dnes autor va\u0159il:<\/p>\n\n<p>Asi p\u016flkilov\u00fd kousek kr\u016ft\u00edch prsou hodlal po\u0161\u00edrovat (zvolna va\u0159it) ve\nv\u00fdvaru (voda, \u00bd litru b\u00edl\u00e9ho v\u00edna, rozmar\u00fdna, 2\u00a0bobkov\u00e9 listy,\n3\u00a0kuli\u010dky nov\u00e9ho ko\u0159en\u00ed, s\u016fl, hrst p\u00f3rku, jedna mrkev, jedna cibule,\nkousek celeru, p\u016flka pastin\u00e1ku\/petr\u017ee\u00adle), ale proto\u017ee si vzpomn\u011bl v\u010das,\nu\u017e p\u0159edchoz\u00edho ve\u010dera dal do misky v\u0161e krom vody a soli a nechal maso p\u0159es\nnoc macerovat ve ko\u0159en\u011bn\u00e9m v\u00edno-zeleninov\u00e9m l\u00e1ku. R\u00e1no to von\u011blo\np\u0159eukrutn\u011b dob\u0159e. Maso vyndal, p\u0159idal vodu, uvedl do varu, osolil a vlo\u017eil\nmaso. Vrouc\u00ed v\u00fdvar st\u00e1hl na naprost\u00e9 minimum a nechal pomali\u010dku t\u00e1hnout\nskoro dv\u011b hodiny.<\/p>\n\n<p>Oloupan\u00e9 brambory nakr\u00e1jel na velmi jemn\u00e9 nudli\u010dky, t\u00e9m\u011b\u0159 <a\nhref=\"http:\/\/en.wikipedia.org\/wiki\/Julienning\"><em>julienne<\/em><\/a>. V\u00a0misce\nroz\u0161lehal jedno vejce, l\u017ei\u010dku mascarpone a trochu smetany a zalil t\u00edm\nbramborov\u00e9 nudli\u010dky. A\u017e na posledn\u00ed chv\u00edli malinko osolil, dob\u0159e\nprom\u00edchal a rozprost\u0159el do n\u011bkolika hrom\u00e1dek na plech (vylo\u017een\u00fd pe\u010dic\u00edm\npap\u00edrem). Dal p\u00e9ct asi na 30\u00a0minut do trouby rozp\u00e1len\u00e9 na 210\u00a0\u00b0C\n(sta\u010dilo by\u00a0m\u00e9n\u011b).<\/p>\n\n<p>Najemno nasekal jednu cibuli a dozlatova osma\u017eil na olivov\u00e9m oleji. P\u0159idal\nplechovku tu\u0148\u00e1ka\u00a0\u2013 ve vlastn\u00ed \u0161\u0165\u00e1v\u011b a proto\u017ee se bude mixovat,\nposta\u010dil i\u00a0levn\u00fd drcen\u00fd\u00a0\u2013 a trochu su\u0161en\u00fdch raj\u010dat, kter\u00e1 si p\u0159edem\nnamo\u010dil (pou\u017eil <em>such\u00e1<\/em> su\u0161en\u00e1 raj\u010data, nikoli nalo\u017een\u00e1\nv\u00a0oleji). Trochu osma\u017eil, ochutil ryb\u00ed om\u00e1\u010dkou a p\u0159idal polovinu balen\u00ed\nmascarpone (l\u017ei\u010dka z\u00a0n\u011bj u\u017e ode\u0161la do brambor). P\u0159endal do vysok\u00e9\nn\u00e1doby, p\u0159ilil asi 2\u00a0dl smetany a rozmixoval do hladka. Pak nechal je\u0161t\u011b\nproj\u00edt varem, st\u00e1hl z\u00a0plotny a bez dal\u0161\u00edho va\u0159en\u00ed v\u00a0om\u00e1\u010dce je\u0161t\u011b\nroz\u0161lehal druhou polovinu mascarpone.<\/p>\n\n<p>Maso bylo v\u00a0t\u00e9 dob\u011b u\u017e uva\u0159en\u00e9 i\u00a0nap\u016fl vychladl\u00e9 v\u00a0chladnouc\u00edm\nv\u00fdvaru. Nakr\u00e1jel je na tenk\u00e9 pl\u00e1tky, doplnil pe\u010den\u00fdmi bramborov\u00fdmi\nst\u0159apci a p\u0159elil hustou a hutnou om\u00e1\u010dkou.<\/p>\n\n<div class=\"center\">\n\t<div><a Ochucena pouze t\u011bmi su\u0161en\u00fdmi raj\u010daty a ryb\u00ed om\u00e1\u010dkou\nnic v\u00edc nepot\u0159ebovala a b\u00e1je\u010dn\u011b podtrhla jak chu\u0165 masa, tak i\u00a0brambor.\nA\u00a0to maso stejn\u011b jako v\u00fdvar, to je kapitola sama pro sebe. Nikdy by m\u011b\nnenapadlo, \u017ee v\u00fdvar s\u00a0v\u00ednem m\u016f\u017ee b\u00fdt tak dobr\u00fd\u00a0\u2013 po v\u00edn\u011b zaj\u00edmav\u011b\nsladkokysel\u00fd, po zelenin\u011b nasl\u00e1dl\u00fd, jemn\u011b ko\u0159en\u011bn\u00fd\u2026 Ur\u010dit\u011b hodn\u011b\novlivn\u00ed v\u00edno (tentokr\u00e1t Rulandsk\u00e9 \u0161ed\u00e9, kabinet 2005). Takovou chu\u0165 masa\njsem nikdy p\u0159edt\u00edm neokusil\u00a0\u2013 a ten v\u00fdvar taky rozhodn\u011b nep\u0159ijde ladem.\nZ\u00edtra bude s\u00a0celest\u00fdnsk\u00fdmi nudlemi a hrst\u00ed zeleninov\u00e9ho <em>juliennu<\/em>\nur\u010dit\u011b chutnat b\u00e1je\u010dn\u011b.<\/p>\n\n<p>Skv\u011bl\u00e9 na tom je i\u00a0to, \u017ee i\u00a0tato om\u00e1\u010dka se d\u00e1 konzumovat studen\u00e1. Je\nt\u0159eba jen vym\u00edchat do studena, p\u0159\u00edpadn\u011b st\u00e1hnout \u0161kraloup. Ale\nvychlazen\u00e1 chutn\u00e1 v\u00fdborn\u011b, stejn\u011b jako maso, kter\u00e9 se studen\u00e9 d\u00e1\nnakr\u00e1jet na je\u0161t\u011b ten\u010d\u00ed pl\u00e1tky.<\/p>\n\n<p>A\u00a0i\u00a0kdy\u017e to tak rozhodn\u011b nevypad\u00e1, cel\u00e9 to dalo nanejv\u00fd\u0161 p\u016fl hodiny\npr\u00e1ce.
